BBQ Chicken Pizza

Who doesn’t love good BBQ Chicken Pizza? Send them to me, I need to convert them.

1 boneless skinless chicken breast
1 T. olive oil in the skillet
salt, pepper, and garlic powder
Freshly sliced red onion rings…totally optional, but very worth it.
Good BBQ sauce*
*To finish the BBQ pizza, you need good BBQ sauce. Not Kraft brand BBQ sauce, or anything that resembles it, if only because it makes me cry that people actually buy those sauces because they are so bad. I personally buy the Sweet Baby Ray’s from Costco, or the Jeri’s brand from Smith’s or Fresh Market. Jeri’s is my favorite, but it is harder to find. using a good BBQ sauce will take your BBQ Chicken pizza from ok to perfect.
In a hot skillet drizzle olive oil then throw the chicken breast in and sprinkle liberally with salt, pepper, and garlic powder. Saute until brown.
One thing I have done for years is to pour a cup of water into the hot pan if the chicken starts to burn. This helps the chicken to continue to cook without burning.
Once the chicken is cooked, chop it finely and set aside.
Roll out your crust.
Rub olive oil over the crust then top with shredded mozzarella cheese.

Once the crust is all cheesed up, top with the chopped chicken and red onion. Bake it for 10 to 12 minutes at 450 degrees.
Once the BBQ chicken pizza is baked, slice it, and then drizzle a swirl of BBQ sauce over the pizza.  You can add other fun toppings as well. Pineapple, mushrooms, green onion, tomato…
