Peanut Chicken Stir Fry

1 lb. thawed boneless, skinless, chicken breasts
2 stalks celery
2 cups chopped broccoli
6 green onions, sliced thinly
1 inch square fresh ginger root, chopped
3 garlic cloves, chopped
1/2 t. cayenne pepper
1 cup water
1 t. chicken base
1 T. brown sugar
1 T. peanut butter
1/4 cup soy sauce
6 servings cooked brown rice

Cut chicken breasts into bite sized pieces, then saute chicken in a HOT non-stick pan.

While cooking, prep veggies and set aside. Once meat is cooked, toss veggies, garlic, and ginger into pan, saute until crisp-tender.

Now add water, cayenne pepper, chicken base, brown sugar, peanut butter and soy sauce. Conitinue heating until sauce is blended. You can increase any of the sauce ingredients or decrease them to adjust for your preferences. The sauce is easy and will not be too picky. Serve over brown rice, prepared as box directs.

Serves about 6. This meal is easily meatless, just remove the chicken, saute the veggies and toss with the sauce. super fast, easy, and yummy.
